Pizza recipe I stole from someone's mother

HOW TO USE: Read entire recipe first, to avoid any surprised especially the spinach part. Follow the instructions sentence by sentence, they're ordered sequentially. Also it's pizza put whatever toppings you want. It's the dough and water/flour ratios that needs a recipe to follow

These here use spoons as measuring units, just the way god and my mum intended

Dough

Put yeast in a bowl, add some flour and sugar and warm water. Mix and let grow separately for a few minutes.

Next use 2 tablespoons yeast and 225 ml warm water. For every cup of flour, add 75 ml water. So that's 75 * 3 = 225 ml water. Add the egg to the flour if desired, then mix with rest of flour. Add either 2 tablespoons oil, or 2 tablespoons butter, or half of each.

Mixing is usually done with a mixer. Hand mixing is possible but much slower. The flour shouldn't stick too much to hands, but shouldn't fall of the mixer easily. Too much water will make a runny, sticky mixture. Add flour to balance out too much water.

If mixed with a mixer, place flour on table and knead for a bit. Hand mixing is basically kneading as well, but practice is nice and good arm workout.

Place dough in bowl, cover with cloth and let rise. 50 minutes should be good, any more is unnecessary. Some would knead the dough after 20 minutes, others would call you insane. huh

Toppings

At this point you should preheat oven to 400F/205C. By the time you're done with the toppings the oven should be hot.

Boil spinach in salted water for 10-12 minutes. Shred a block of mozzarella cheese into a bowl. Cut the onion in half. Slice one half, dice the other half. Slice a bell pepper. Cut chicken into small pieces, cubes or strips, and season with spices. Slice tomato into circles (or diced).

Pizza time

Take out dough, roll it out and round into the size of the pan. Press dough with fingers to make the surface uneven. Fold dough around edges. Use a rolling pin for a thin, crunchy bread. Or use hands for a thick and soft crust.

In order, do:

  1. Spread tomato sauce
  2. Sprinkle diced onions and bell peppers
  3. Spinach
  4. Chicken
  5. Sliced onions and pepperoni
  6. Cheese
  7. Sliced/tomatoes Diced.

Baking time

Place pizza in oven for 10-12 minutes, then lower to 350 F/175 C for another 15-20 minutes. In total, pizza should spend 30-35 minutes to cook completely. Still, monitor to make sure you don't under or over cook it.
